Quick Post: White Vinegar and Corn

Bubble and burst.  White vinegar is usually made from corn (White vinegar can be made from any grain, vegetable or fruit).  If you use it to clean, cook, ferment, etc., please make sure you disclose this to the corn allergic / intolerant individual visiting your home.  Though it occasionally makes me unpopular to take the stance that something is corn-y until proven otherwise, to avoid that item/product/drink/food, and to potentially offend someone; I will always choose to stay healthy and to keep my child healthy over hurting someone else’s feelings.  Seems like a no-brainer to me.

The vinegar from Heinz, you know, “America’s favorite,” is all natural and is always sourced from all natural corn and apples.  I don’t see the word organic anywhere.  (Heinz® Vinegar – How is Vinegar Made – Vinegar 101)

Vinegar does indeed work wonders, unfortunately one of those wonders can be to turn you into an unrecognizable reactive, hot-mess, if you have a corn allergy.  Another potential pitfall in the production of vinegar could be the type of yeast used during the alcoholic fermentation process.  Yeast is also notoriously corn-y, more on that later.

“Two natural biochemical processes are used to make vinegar, both the result of the action of microorganisms. The first process, called alcoholic fermentation, is brought about by the action of yeasts, which change natural sugars into alcohol under controlled conditions. The second process, called acid fermentation is brought about by the action of a microorganism called acetobacter that converts the alcohol to acetic acid.

There are many types of vinegar available on the market with new specialty vinegar surfacing every year. The following provides a brief description of how some of the more common vinegars are made.

Pure White Vinegar:
Corn is converted to starch and then sugar, and then the secondary fermentation of a neutral spirit alcohol is converted into vinegar.”

When I receive this type of retort to a statement I’ve made:

“White vinegar is not corn, it’s vinegar.  How exactly is white vinegar corn?”

I have to chuckle.  It reminds me that people have NO idea how anything is made and it also gives me a glance into the psyche of some of my friends and family.  Some are very quick to take the stance that my statement is untrue/unsubstantiated simply due to their own ignorance, which is masquerading as self-righteous disbelief.
